PEMAKAIAN ESSENCE PADA PEMBUATAN CAKES

Abstract

Accommodation is one of the elements in tourism industry that provides temporary places and services for someone to live in. In hotel there is a department, which is responsible for the food and beverage services, that is Food and Beverage Department. In this department there is one section that produces many kinds of cake and bread that is the pastry section. The products produced by the pastry section may be classified into three classifications; they are cream, cakes, and sweet. This research is limited into the production of cakes, and the use of essence to improve the aroma and tastes. While the kinds of essence used in the pastry section can be divided into three characteristics based on its form, they are: powder, paste, and liquid essence.
